<title>ABSTRACT</title>
<p>This paper aims to evaluate knowledge and perception of tourists towards food safety in different food establishments in Chiang Mai, Thailand. Data was collected during the period from October 2013 to February 2014. Four hundred tourist respondents were randomly selected from a survey. The statistical analysis for the study of the level of food safety knowledge and perception towards food safety of tourists was performed using the SPSS software for Windows. The influential factors that affect tourists&#8217; overall food safety assessment were analyzed within the framework of &#8220;ordered logit model.&#8221; The findings reveal that tourists have a fundamental knowledge of some aspects of food safety and the scale of food safety perception is high.
